Restaurant captain (also called as a head waiter ) is a person who checks the waiters employed in his restaurant. He also has to perform additional duties to achieve excellent customer service. He also has to maintain a high standard quality food to be served to the guest.

- He should always greet, welcome the guest, assist him to the table and offer him a seat.
- He should be fluent in English and should speak clearly with the guest.
- Should maintain cleanliness in the restautant .
- He should have good knowledge of menu, cocktails, mocktails and special offers that is available in his restaurant.
- He should also know to make cocktails and mocktails if required.
- He should have the knowledge to answer the guest phone calls using telephone etiquette.
- He should be able to answer the queries of the guest regarding food or drinks.
- If problem arises with the quality of the food then he should be able to solve the problem of the guest promptly and efficiently..
- He should maintain the permitted time of the food and the quality of the food that is served the guest.
- He should set the tables according to the types of events that has to be organised.
- Should keep a track of food products and bar items and also to keep in stock as per the demand as per daily basis.
- Should also keep a track of breakage of crockery / glass items etc.
- Should check the items needed to be brought from stores by doing proper requisition.
- He is a link between the restaurant manager and the restaurant staff to ensure good and positive achievement of the restaurant.
- Should be able to give training to the new trainee staff.
- Should be able to fulfill any other duties regarding food and beverage assigned to him by the F&B manager.
